
Mushroom Pot Rice 🍄🍙🥬
My go-to when it comes to meals are hearty & wholesome rice bowls! One of my favourite cooking styles is Indo-Chinese & whenever I crave something warm & yum, I make this super easy & flavourful 15 min ‘Mushroom Pot Rice’ 🍄 You can make it healthier & protein rich by adding some paneer/ tofu & more veggies of your choice — it’s going to be delicious & here is how you can make it 🚀
Ingredients :
Button Mushrooms — 150-200g/ 12-15 nos
Onion — 1 no
Ginger — 1/4th inch
Garlic — 5 cloves
Red Chilli Flakes — 1 Tsp
Zucchini — 1/2 no
Oil — 2-3 Tbsps
Veggie Stock Cube — 1 no
Salt & Pepper to Taste
Brown Sugar — 1/2 Tsp
Red Chilli Sauce — 1 Tbsp
Light Soy Sauce — 1/2 Tbsp
Cornstarch — 1 Tbsp/ 9g
Water — 150-200ml (more if needed)
Green Onion — Garnish
Sesame Seeds — Garnish
Rice — 3/4th to 1 Cup (cooked)
Process :
* Heat some oil & sauté some ginger, garlic & red chilli flakes
* Next add in some sliced onion & mushrooms on medium flame until they are caramelised
* Add some more oil to the pan & add in more veggies of your choice — I’ve used zucchini today
* Season with salt & pepper to taste & flavour with soy sauce, brown sugar & red chilli sauce — toss the veggies well
* Finally, add in a cornflour slurry to thicken the sauce to your desired consistency & your mushroom sauce is ready
* Now add in your cold boiled rice — preferably one day old cold rice from the fridge & add it to your sauce & mix it really well
* Finish with some spring greens, sesame seeds & it’s ready!
